Winter Salad with a Hope of Spring

i am sure it comes as no surprise that i love roasted sweet potatoes. i can't help it. they are affordable, versatile, and are good for you. what is not to love? sweet potatoes are the shining star in this lovely salad, and paired with light and tangy goat cheese, toasted almonds..it is a delicious, almost festive feeling and full of all the flavors we love. i pan roasted the sweet potatoes first, assembled the salad, and then towards the end toasted the slivered almonds because they don't take long, and there you have it, a gorgeous salad perfect for any occasion!

you'll need:
1 large sweet potato, peeled and cut into small pieces
1 tsp minced garlic
1/2 cup spinach, finely chopped 
1/2 tsp crushed red pepper
1/2 tsp chili
1 tsp turmeric powder
1/2 tsp cumin
1 tsp garam masala
1/2 tsp madras curry powder
1/2 tsp mango powder (amchur)
1 tsp cinnamon 
salt and pepper
1-2 tablespoons ghee

1/3 cup slivered almonds
goat cheese
rasberries
1/2 Fuji apple, thinly sliced

2-3 cups fresh spinach

in large pan, heat up ghee. when hot, throw in sweet potato. add spices and chopped spinach and stir continually so everything gets seasoned and well coated. cook for about 11-15 minutes, or until the potatoes are to your liking. 

let them cool slightly after cooking in spices.

pour over a large bowl filled with spinach. 

in same pan, toast the almonds using the left over bits. add a tad more ghee if too dry. 
remove from heat once fragrant. 

add that to salad, along with goat cheese torn into generous crumbles, raspberries and apple slices.
