Nest dropped Egg Drop Soup
The story behind egg drop soup comes from the chinese people, who were quite clever and sharp about not letting anything go to waste..So the story goes, they'd come upon an abandoned nest with the eggs still inside either cracked or still intact..So they'd use the "dropped eggs" and use them in the soup... My favorite part is dropping the eggs in the boiling broth and watch them cook instantly. I created a recipe that is easy to follow with very few ingredients, although it does not escape the excellent taste you'd find in a resturaunt. Enjoy.
You'll need:
3 cups of chicken broth
1/8 tsp ground ginger
1 tsp rice wine vinegar
splash of soy sauce
1 1/2 T cornstarch
2 eggs
1 egg yolk
In a medium saucepan, pour in chicken broth. Stir in ginger, rice wine vinegar and soy sauce. Bring it all to a rolling boil. In a small bowl, stir corn starch and a little broth to make a smooth pasty consistency. Set aside. In a separate bowl, whisk together the eggs and the extra egg yolk. Drizzle egg mixture a little bit at a time, into the boiling chicken broth. After you have used all the egg mixture, you're going to want to gradually put in the corn starch paste to thicken the soup. Serve hot, and top with chives if you so please.
