Blueberry Sour Cream Cheese Cake
Ahh, the season of summer, my favorite..I put together this scrumptious pie because my sweet neighbor Char had kindly dropped over a bucket of the blue jewels, and I simply could not let them go to waste!! I had my couple friends over for a Sunday afternoon dinner and this pie completed the meal..I know it's winter now, but I can reminisce and look forward to next summer!!
You'll need:
I graham cracker crust
1/4 cup melted butter
1 cup sugar, divided
2 eggs
2 blocks of 8 oz cream cheeses
a dash of salt
1 1/2 tsp vanilla, divided
1 cup sour cream
1/2 cup blue berries
For filling: beat eggs. Combine cream cheese, 2/3 cup sugar, salt and eggs and a 1/2 tsp of vanilla. Beat at med. speed for about 5 minutes. Pour into pie pan that graham cracker crust is pressed into. Bake at 350 degrees for 25 minutes. Cool for 1/2 hour or so before dressing the cheesecake with beaut-ious topping!!
For topping: mix sour cream, 3tbs sugar, and 1 tsp vanilla. spread on top of cheesecake. Spread blueberries on top and you have yourself a beautiful cheesecake that looks like a million bucks!! keep refrigerated until ready to eat..
