Bring on the Beans!


So it's day 6 of our 21 day challenge. No meat, no dairy, and no processed crazy man made additives. It's made quite an impact on us so far. For my husband Nathan, he's always been one to possess excellent self control with things. He's too busy to eat anyways. So I admire his ability to participate in this fast with me with such ease and excellence. He would say it's not that simple. He misses burgers and coke and shredded cheddar cheese. He says he has to make more of a conscious effort concerning food than he normally would, but I still think he's such a champ.
I, surprisingly, feel really great. It feels rewarding to know food is not my master and it's not owning me right now. It has always been a battle for me, yet this time God is working through me and giving me a heart of steadfastness and self discapline. I do not have any regrets for what I've eaten the last week-(no french fries, frozen cookie dough or blocks of cheese--yeesh!) and that is something I'm really proud of. I am thinking clearer, and I am being more proactive in how I interact with my family. I am excited for my husband to come home..(a lot of times it's easy to just say hi quickly and move on to the next thing) and I am more patient with my son. Instead of scolding him so quickly, I use more of a soft yet firm tone with him. Who knew all this would be affected by just my eating better? Not me, that's for sure!
My husband was so sweet and encouraging. He asked me the other day how I was holding up, and he said, "you know, you've become more beautiful." I'm dumbfounded. What? "yeah, i've noticed how you are so cheerful and delighted when I come home. Even your hair looks healthier." Aw shucks, babe! I should probably keep this up then!
Today for breakfast we ate fresh pineapple and bananas, for lunch, just quick corn chips and salsa. But for supper, we went all out! And you know, I didn't even miss the cheese or sour cream that much when it wasn't an option! Ok, 6 down, 15 more days to go!
Lord Jesus, continue to transform us and make us new! Teach, admonish, pour out Your Spirit and allow us to be more hungry and thirsty for You!

Jana's Brown Eyed Black Beans (see august 2010 post-just omitt the cheese+bacon)
corn tortillas heat up in pan
pico de gallo-(see june 2010 post)
refried beans heat up w/ a little water added to cream-ify
fresh cut avacado

not too shabby!
