Fluffy Ruffy Corn Dogs
This upcoming pregnancy has made me gone mad. Mad for crazy food that I don't normally get my hands on, but this little one is banging around inside of me asking for them.
I found myself downing a whole jar of Kosher Klaussen Garlic Pickles without thinking twice. For breakfast, I've been sneaking into the freezer without the boys seeing me and mowing on Mint Chocolate Ice cream-what is WRONG with me?! I can't help it, and I've been encouraged that it's just a phase, it has to pass sometime! I'll say it does, or the scale will soon not have me!
Which brings me to my present craving. A big huge buttery, crispy, deep fried corn dog. Just the thought of it makes my stomach quake in anticipation. Don't worry, baby! It's coming!
Mommie won't let you down!
So I thought I'd share in my bounty (of madness) and jot down the quick recipe for a delicious corn dog. Super easy and fast to make. ENJOY!
you'll need:
1 package of corn muffin mix (8.5 oz)
1 large egg
1/3 cup of milk (if you want to go insane, use half and half)
1 package of hot dogs (here is where I am sane-I used Kosher Hebrew National-no shadys in these dogs)
skewers
oil/deep fryer
In large bowl combine muffin mix, egg and milk. Stir together with a fork, about 30 strokes. Batter will be a little lumpy. Let rest about 5 minutes before pouring.
fire up the deep fryer to 365 degrees.
Skewer hot dogs and pour batter into lare cup or jar. Dip hot dogs in batter and promptly drop in fryer. Once golden brown, remove and place on paper towel.
Repeat with hot dogs, rest of batter, and skewers.
