Crispy Alaskan Fish Tacos



I just knew it..I've made my cilantro lime slaw before with the pulled pork tacos, but I imagined it would have to taste just as scrumptious with fish as well. And boy, was I right!!

I bought a huge bag of crispy fish sticks from Costco, for one, it's cheaper to buy in bulk, and for two, looking on the back of the bag, I was impressed with the quality of fish and how much they use to the ratio of breading and such. Delicious little buggers.

So this afternoon, I had left over slaw and plenty of corn tortillas, and I needed to feed Benjamin and myself before we went out for a swim. We both ate 2 and they were great! They look pretty, but are fast to assemble!

you will need:

8 fish sticks
2 cups of Cilantro Lime Slaw
6 corn tortillas
oil for frying

On a small baking sheet covered in foil, bake fish sticks according to manufacturer's directions. (I popped em' in for about 12 minutes at 475 degrees.)

In small pan heat up a little canola oil and with tongs, carefully place one side of corn tortilla in oil. (It should be a half moon) repeat with other side. Place on a paper towel. Repeat with rest of tortillas.

Once fish are done, place 2 sticks in taco shell, and top with cilantro lime slaw. Repeat till all sticks, tacos, and slaw is used up.
Eat meal!
