Winner Winner Chicken Dinner

My friend Rachel just had a beautiful baby boy (Rowan is her 3rd) and I promised her a meal. This is in my repetoir of quick easy meals to pop in the oven, and be on their way into your mouth in no time. This literally took me like 5 minutes to prep and it tastes delicious.

I'll give you the rundown (no autocorrect, I do NOT mean rubdown) In a 8x8 glass dish, lay in 2 boneless chicken breasts, next row comes some frozen or fresh greens of your choice (in this case I chose broccoli, but green beans would be tasty too) and third row is chopped potatoes. In the dish they go. I then added salt, pepper, parsley, oregano, lemon pepper, and mustard.

Season it how you wish. Italian season would work just as well.. Top with slices of butter for an added touch and flavor. Bam. Into the oven at 350 degrees for an hour. Dinner is served. Serve with a crisp salad and a loaf of fresh bread.
