Queso Amarillo
The other day, Nathan and I created a quick date* at home because the kids were in bed early and we hadn't had facetime in a while. He was finishing some editing on the computer, so I wanted to make a quick, fun snack for us to share. So i just found whatever leftovers we had in the fridge and basically threw them together knowing they should probably taste good together.
You should have seen us;) there we were, sitting at the kitchen island, sharing a vanilla coke with two straws, and dipping chips into this creamy cheesy queso with only the 2 singular lights above the counter to light our way. It felt like we had created our own authentic Catina in our very own kitchen. We were able to relax, talk about our weeks and what was going on in our lives, and the best? heading to the bedroom right after without having to drive home.*
you'll need:
this is all eyeballed because I literally used random parts of fridge findings..
about 1 cup of Velveeta cheese, cut into cubes
about 1/4 cup of cream cheese, cut into chunks
1/2 beef steak tomato, cut and chunked
2 cups of spinach-I sauteed spinach in pan ahead of time, so it cooked down
2 tablespoons of crumpled bacon bits (i used the real bits)
1/4 cup heavy whipping cream
that's pretty much it. (i said these were leftovers) i melted the Velveeta and cream cheese in the microwave in 1 minute increments to stir it down. I then threw in the sauteed spinach, tomato and bacon and continued to stir and microwave until it was a melty, creamy consistency. Somewhere in there, i did pour in the cream. It's pretty easy-as long as all the ingredients get in a big microwavable bowl at some point, you should have a tasty appetizer on your hands! enjoy.

Hello! I just found your blog and love it! I'm from America and my family and I are now living in Kolkata, India. So I love all of your Indian recipes! Curious how you get velveeta cheese to make this dip?!?!?? Is that available in Dhaka bc I sure can't get it here!

Amy, welcome, welcome!! So glad to have you here! How wonderful for you and your family to get some time in beautiful India! I am actually in the states, so of course velveeta seems to be readily available;) since I was using leftovers, i don't see why you couldn't find another soft cheese to substitute? I remember cheese being super expensive when I was in Bangladesh, so I get you! Again, I appreciate so much that you took the time to write me and stay for a while! blessings in Him!
