easy recipe. tasty. vegetarian. surprisingly filling.
make these quite often as my husbamd enjoys them, and I am trying to keep my meat intake down, without skimping on protein.
you'll need:
1 large sweet potato, cut into cubes or small pieces
1 tablespoon cumin
1 tablespoon cinnamon
1 can black beans
1 small onion, finely chopped
1 tablespoon butter
a small rind of gouda cheese (optional)
1 teaspoon minced garlic
1 teaspoon cumin
1/4 cup plain yogurt
squeeze of 1/2 lime
1 tablespoon finely chopped cilantro
preheat oven to 375 degrees.
peel and cut sweet potato. (I had a big one) drizzle a little olive oil. toss with cumin, and cinnamon.
place on baking sheet lined with foil
Bake for 40 minutes, turning every so often.
Black beans in pan, saute onion in butter first. add a rind of smoked gouda, and cook with it in there. remove towards end of cooking. also add minced garlic, cumin, salt.
[this is a healthier substitute in place of sour cream, because face it, who doesn't love a dallop of sour cream on your tacos? but trust me, this is just as tasty..]
for cilantro lime sauce: 1/4 cup yogurt, squeeze of 1/2 lime, 1 tablespoon chopped cilantro.
to assemble,
tortillas,
roasted sweet potatoes
tomatoes (optional)
smoked gouda black beans
dallop of cilantro lime sauce
