Prosciutto Flatbread Pizza



Bar Divani has been one of our favorite past restaurants here in Grand Rapids. It was heavily influenced with Indian cuisine, has a wonderful bar and drink assortment, and it has a very chill, yet cozy atmosphere.  It has since been changed hands with a new chef, so unfortunately some of our favorite menu items were removed and replaced with new dishes.  

One of my absolute favorite small plates that i would go there specifically for, was the flat bread pizza topped with prosciutto.  It was thin and crisp, with hints of melty brie cheese, and crisp arugula greens, and a special local ingredient, Mrs. Dog's Disappearing Mustard, that added just the right zing and pop to the pizza. so good. 

well, sadly, the pizza is no longer served there, but sadness need not linger-i have made the very same pizza at home many times at home and it tastes fabulous! I am happy to share it with you and i hope you enjoy it as much as my husband and do. It is perfect for a date night in, or when friends come over, a fun appetizer to serve. You might want to make two or three:)

you'll need:

1-2 flat bread pita breads, or your flat bread of choice 
thinly cut prosciutto
pesto
Mrs. Dog's Disappearing mustard
brie slices [i left the rind on]
baby arugula


to assemble:
flat bread, 
spread a bit of pesto, 
then a bit of the mustard, 
place a few brie pieces on the pizza, 
then layer prosciutto slices [be as generous or as sparse as you'd prefer]

pop in hot oven preheated to 400 degrees on a baking sheet for about
10-15 minutes.

remove and top with fresh arugula.

cut with pizza slicer and enjoy.
