baked goat cheese and honey with garlic rubbed crostini

all my littles are sickies at the moment. it is day 3 and we are in the thick of it-literally. Today was comprised of jammies, Daniel Tiger on PBS, and lots of water, rest, and snuggles. Not much of anything got done today.

When supper came around i wasn't looking to throw a feast, but i was looking for comfy cozy comfort food. What better than baked mac and cheese? I doctored it up with two cheeses, lots of pepper [to clear up the nasal passage ways;) and added crumpled bacon and buttery bread crumbs...that is for a different post though...#cliffhanger

As a side, i thought a bit of "bread and butter" would do well to go along with the comfort theme, and what better way to bring it up a notch than with french bread broiled under heat, rubbed with fresh garlic, and gooey creamy goat cheese to slather on it? 

I had a little roll of goat cheese that i purchased at Aldi-i am thrilled to see that Aldi has been offering more of a variety of delightful cheeses all at a very affordable price. So thank you, Aldi. My cheese addiction thanks you. And so does my wallet.

as simple as the ingredients sound, it really is delicious and so easy to make, although once you try it, it will feel decadent and indulgent without all the fuss. i'd like to credit pinterest for this recipe that helped bring my vision to life, the only thing i deviated from differently is used ground thyme instead of fresh, and my goat cheese already had honey infused in it..either way, i hope you like it!

without further ado:

you will need:
half a loaf of french bread, thinly sliced
olive oil
a small log of goat cheese, about 6-8 oz
honey
thyme
kosher sea salt
freshly cracked pepper
a fresh clove of garlic, cut in half

on a baking sheet, covered in tin foil, lay out the bread slices in two rows. drizzle lightly with olive oil.

in a small ramekin or small oven safe dish, spread the goat cheese in an even layer.

pop both the french slices and goat cheese in oven on broil-i had it preheated to 400 degrees from baking the mac and cheese, the key is a hot oven. i turned the dial to broil. 

broil for 5-8 minutes and take the crostinis out when the edges are browned. 
remove goat cheese as well.

take the cut garlic clove and rub it generously on the crostinis, taking care not to burn yourself.

dust goat cheese with thyme, about 1/2 teaspoon, a generous drizzle of honey, and a pinch of sea salt, and finished with a few cranks of the black pepper.

serve immediately.
