tammy is one of my closest friends, she is so full of generosity and thoughtfulness, one of her many gifts is learning to speak the language of those she loves. she speaks mine fluently, that is for sure. A part of my language is a love and delight for small tiny things, that is nothing new, but tamm has met me where i am at, and finds tiny treasures amongst her travels and brings them home to me, much to my surprise and delight.
recently, we were at church and she had been gone and as we were standing on the children's wing, she gave me a huge smile and reached for a paper bag. i could not imagine what she possibly could be holding, but she pulled out this yellow mesh bag with the most adorable tiniest baby potatoes!!! I could not contain my joy and excitement- i have never even seen or heard of tiny baby potatoes let alone be holding them!! i loved them so much and could not wait to put them to some sort of delicious use.
I thought i could make some sort of Indian type dish using the potatoes and my spices, and chelsea and max came over the night that i used them and they really loved them! Max ate most of them and he joked in all his corniness saying, "these bombay potatoes are totally bomb!"
i think tamm would be also [hopefully] pleased that i put the tiny potatoes to use creating a healthy, gluten free, dairy free, healthy,nicknamed tasty little dish. and that, would be speaking her language.*
you'll need:
-about 1/2 pound of [i think the official name of these little gems is
baby pearl potatoes*]
-1 inch piece of ginger, skin removed
-1 tablespoon minced garlic
1 small onion, finely chopped
1 tsp chili powder
1 tsp turmeric
1 tsp garam masala
1 tsp cumin
1 tsp crushed fenugreek leaves
1/2 teaspoon ground mustard
salt snd ground pepper to taste
in a large pan, saute the onion with a bit of coconut oil.
in mortar and pestle, grind up ginger, garlic to create a paste.
add to oil and onions.
stir in spices and coat baby potatoes in bombay mixture.
continue to stir and saute until potatoes are softened and cooked to your liking.
remove from heat, and plate while hot.
i [serve]d mine alone side homemade lettuce wraps and chips and pico de gallo.
