Salad Obsession: Grilled Halloumi and Fugi Apple Salad

i made these salads this past summer, because for some reason, summer just screams salad to me..they are cool, refreshing, crisp and light, perfect for a summer evening in the back garden, paired with a cold glass of sharp white wine, ahhh.. nothing better. i had been meaning to post these for a while, but i had't gotten to it with the craziness of my eye surgery..it was just easier to write little poems there for a while:) so, seeing now as the theme seems to be salads, i will share all the salads i have been playing around with, that seem to be a hit around here.  i know they might not be the top healthiest, and while i am working on that..salads are still a better choice than greasy fast food burgers and salty french fries..it's baby steps people!! 


I am not sure if you have ever heard of a cheese called halloumi, i never had until i lived in England for a year and the English are crazy for it! They eat it on burgers, on salads, as starters, fried, grilled, sliced..its everywhere and i didn't mind one bit. i love it!! it is a cheese made in Cyprus, it has a briney taste, it is made from a combination of sheep and goat's milk. to me, that is the best of both worlds! it also has a high melting point, which is why it makes it so easy to grill it or fry it. it forms this beautiful golden crust on the outside, and the inside stays soft and chewy and melty-soooo good! 

i love the savory  mixed with a bit of sweet so of course it is perfect on salads. 

this one i used fugi apple-[my favorite kind] which made an excellent pairing, but i also love halloumi with peaches and even with dried figs or dates. the combos are endless!

so you know the drill:

salad greens
half a block of halloumi: slice it in fairly thick slabs, and in a pan, fry until golden on each side
large fugi apple, sliced
red onion sliced 
cranberries, dried
sunflower seeds
