Creamy Peanut butter Chocolate truffles

I have been craving something with chocolate and peanut butter, namely Reece's Peanut Butter Cups, but since i can't just run out to grab that at the store, i have to get creative and put a little elbow grease into finding myself some candy.

These balls totally hit the spot. I was face timing with a friend and she had said her family made reece's peanut butter bars but didn't have graham cracker crumbs, i realized i didn't either, so instead of homemade peanut butter cups, i thought i would make truffle balls. Basically? Peanut butter rolled into a ball and dunked in chocolate to give it a decadent outer shell.

I looked all over my Pinterest Boards for any saved recipes and i found a few, so i went off those and using what i had. It had to be simple and using minimal ingredients. And so, we have found ourselves here.

you'll need:

1 1/2 cups creamy peanut butter, crunchy is great too, i bet that would only add to the over all texture
2 cups powdered sugar
3 tablespoons melted butter
a pinch of salt
8-12 oz semi sweet chocolate chips
1 tbs butter

in a large bowl, mix peanut butter, powdered sugar, and melted butter, and salt. mix well till it's a big blob.

on a large baking sheet covered in foil or wax paper, roll the dough into 1 inch balls.

chill for a good 30-60 min.

in the mean time, melt chocolate chips and butter in 20 to 30 second increments till silky melted and shiny.  i often add a bit of olive oil to help with the process and give me smoother chocolate for coating.

pull out peanut butter balls. drudge in melted chocolate and place back on sheet. sprinkled a bit of sea salt on a few of them.


chill for another 15-20, if you can, then you can eat!
