Brown Butter Chocolate Chip Blondie Skillet

Holy smokes, this was good! I follow Half Baked Harvest both in the blog world as well as the Instagram world, and she, I believe is one of the best home cooks out there! Her pictures are so amazing and she is always coming up with new recipes left and right! I have tried many of Tieghan's recipes and they have all turned out beautifully. That has less to do with me, and more to do with her excellent recipe writing and sharing skills.  This recipe I tried of hers today was no different! 

My daughter Olive and I put this one together amidst the family working on a 500 piece puzzle that was sent from Grandma and Grandpa out in California. There have been lots of board games and puzzles around here, lately. And lots of kitchen time too..

Olive gently stirred two sticks of butter in the heavy bottomed skillet and said gleefully, "I can already tell this is not going to be very heathy, but really good!!" Hahaha! She is right on both counts! 
We weren't going for heathy this evening. Just straight up comfort. Deliciousness. A sweet indulgence that did not disappoint. 

The wonderful thing about this recipe is that it was all prepared on one skillet, no extra dishes needed to be dirtied, i only used one other bowl to whisk the eggs because Tieghan instructs that they be whisked first before going into the skillet to give the blondie that perfect wrinkly gooey top. i didn't question her and followed all of her directions! 

Our family ate straight from the skillet. We all grabbed a spoon, and Dad had run to the nearest store to grab vanilla ice cream, and that was the perfect accompaniment to this very rich dessert! It melted into all the nooks and crannies and getting a large spoonful of creamy chocolatey peanut buttery goodness with cold ice cream was heaven. 

I'll share the recipe here, but I want to make it clear that this recipe belongs to Half Baked Harvest and you can find the original recipe here. I am so glad we tried her recipe!! It has been fun to work down the list of recipes i have wanted to try that I just never got around to till now. We have so much extra time that we might as well use it trying new things, creating, and being innovative with our time and limited resources. 

It's also a good thing I got my 3 mile walk in to counteract this decadent treat. I'll make sure not to skip tomorrow either.:)


you'll need:

2 sticks of salted butter [1 cup]
3/4 cup creamy peanut butter
1 cup white sugar
1/2 cup brown sugar
2 tsp vanilla extract
3 large eggs
1 cup flour
1 tsp baking powder
1 cup semi sweet chocolate chips
kosher sea salt

1. preheat oven to 350 degrees F.

2.  Melt butter in heavy bottomed skillet on medium heat. Let the butter toast a little bit until it is slightly brown..2-3 minutes. Keep stirring. Turn heat off and stir in peanut butter, sugar, brown sugar and vanilla. Let it cool for a bit before adding eggs.

3. In a small bowl whisk the eggs till frothy and bubbly. Stir the egg mixture into the peanutbutter mix.  Add flour and baking powder.  Carefully add chocolate chips and swirl those in as well. 

4. Move the skillet to the oven and bake for 23-25 minutes, till just about set around the edges. It will be gooey in the middle and slightly underbaked, but that's what we are going for! 

Drizzle a bit of melted peanut butter on top, and sprinkle some chunky sea salt, along with a few generous scoops of vanilla ice cream. 

Give everyone a spoon and go to town!
