Crispy Fish Tacos with Purple Cabbage Slaw

I don't know if i can really even call this a "recipe", more so an assembly..of ingredients all gathered together to form a celebration for your mouth. Using frozen fish sticks-wait! hear me out! Repurposing the humble fish stick to make a hefty taco, piled high with jazzy purple slaw, and an extra kick adding creamy red sauce? I hope that does't sound so bad, if you read up to here..

I will tell you, our family loves these fish tacos because it's another way to use up the fish sticks, and it's salty, crunchy, filling, and who doesn't love another fun thing to shove into a tortilla shell and call it a taco?

We have a large sized bag of Alaskan Pollock frozen fish sticks that we purchased from Costco, and the bag lasts us plenty long! We just pop them in the oven and either eat them with ranch, or homemade tartar sauce, ketchup even-it's a kid thing, i think, and also in our tacos too. I've been making these for years! If you want to give this a try all you need is:

Frozen Fish sticks-you can use what ever kind you want, crispy breaded is what we are going for, but grilled is fine too, cooked as directed 

corn or flour tortillas- i LOVE corn tortillas, but my kids love the fluffy flour ones, both are great

Cabbage slaw- you can refer to this recipe here, or you can make a quick one using
cilantro
purple or white cabbage, finely chopped
red onion, finely chopped
lime
salt

[toss together]

And for a creamy sauce, I actually used some ranch that i made at home and took some of it in a separate bowl and added chili powder, and a splash of vinegar, and a pinch of sugar

OR you could take regular ranch and add a bit of taco seasoning to it..what ever you want!

Method:

heat up tortillas till warm and pliable.

when fish sticks are done baking in oven, roughly chop up two or three and scoop into taco shell.
add a heaping plop of cabbage slaw. top with sour cream or creamy red sauce or cilantro lime ranch..
and enjoy!!
