Double Chocolate Peanut Butter Swirl Brownies

I never imagined we would be baking and cooking so much in this quarantine! It seems to be a past time that our entire family has developed to pass the time. The kids and their dad have each got a turn in the kitchen to pick something to bake with him, and he oversees them while they get their hands deep in ingredients! Out of our kitchen have come cinnamon rolls, fried doughnuts, molten lava cakes, and so much more! I usually stick with cooking because I tend to mess up with baking, it is much more precise than cooking, and it is my weak area. My kind of baking is jazzing up boxed mixes and i am quite ok with that! I love eating the bounty of others baking, make no mistake, but if it were up to me to do all the baking alone, it would be quite..rough. 

i did my style of baking with these brownies. My kids have been doing amazing with school at home, and i am so proud of them.  They have had to adapt so much, say goodbye to their old normal routine of being surrounded by their friends, settling into good structure with their professional teachers, and what they are used to, in exchange for being home 24/7, doing distant learning with loads of work sent from school, and being with one another, instead of their usual friends. It by no means is perfect around here, let me just say that, but it has been encouraging to see them rise up to this very different way of doing life. 


All that to say, i wanted to bless them
with a little treat in between subjects. So i baked these gooey brownies that smelled so good in the oven, and we all enjoyed them piping hot. We wished we had milk to wash them down, but we were out, so we just ate them on their own. 

I took a boxed mix of brownies and just added chocolate chips and made a peanut butter swirl impulsively to add in, and we all loved that addition. 

I'll share the way i did it. 

you'll need:
One box of fudge brownie mix
2 eggs 
1/2 cup vegetable oil
3 tablespoons of water
1/2 cup semi sweet chocolate chips 

for peanut butter swirl:
1/2 cup creamy peanut butter
1/4 cup powdered sugar 

Prepare the mix, adding in the ingredients listed on the back of the box. 
Add chocolate chips. 

Pour into prepared baking dish. I used a 9x9, and sprayed to minimize sticking. 

Melt the peanut butter in the microwave and then whisk in powdered sugar. It will be thick, but blobby and smooth. 

I dolloped spoonfuls onto the top of the brownie pan in different spots and then with a knife, i swirled the chunks together. It looks so pretty! 

Bake for 23-25 min. [we like to under bake our brownies a bit, so you can also eyeball it to your liking as well.]
