A Twist on the Nacho Scene
One of my absolute favorite comfort foods is nachos. All the cheesy goodness layered in between vegies and beef and spicyness..who can resist?! Of course I'm always trying new variations because you can pretty much stick anything on a chip.
So I came with my own salty delight of this common treat. EnJOY!!
you will need:
shallow baking tin covered with a sheet of tinfoil
piles of corn tortillas
secret ingredient: gorgonzola grated cheese
tomato sliced/diced
green onion sliced/diced
bunch of cilantro finely chopped
a can of refried beans (i use fat free..as if I'm saving any)
Layer the tortillas, cheese, beans, veggies and whatnot into the oven at 400 degrees for about 12-15 minutes.
Once the hot layered goodness comes out, top with fresh cilantro. The gorgonzola will sure throw you for a loop, but a fun pop in unique flavor that will be sure be having you beg for more!
