Blue Moon Fajitas



So I've always been a little intimidated with the idea of working with steak-even though I love the stuff, I came to this compromise of purchasing 3 little tenderloin steaks and throwing a little fajita fiesta together... It's a good start for me, beginning with this simple style cut meat and moving onto bigger better things gradually. Any who-I've got this dynamite recipe that is mouthwatering and plentiful.. Have at it and chew away.

you"ll need:

3 tenderloin steaks (about 3 oz each) cut up into thin strips

marinade:
salt/pepper (of course)
1 tsp sugar
juice of 1 lemon
1 tbs vinegar
1 tsp cumin
1 tsp oregano
dash of cayenne
1 tsp garlic
1 tsp coriander
a bottle of Blue moon ale (or whatever beer you have on hand..)


I large green onion sliced
I large white (or purple) onion sliced
1 tbsp oil

corn tortillas warmed

toppings:
sour cream
avocados
plenty of shredded cheese
boat load of cilantro
salsa

What you're gonna do is whisk all the marinade ingredients in a large bowl. Drop in steak strips after trimming fat off. Let marinate in fridge for an 1 hour or overnight. Toss cut up veggies in pan with oil and sweat em' till the onions are translucent in color.

Assembly: corn tortilla/steak fajita meat/cheese/toppings/ dollop of sour cream..ENJOY!!!
