Coco Moco Pie-chocolate coconut pie


After my grandmother moved out of her house, she allowed all her children and grandchildren to do a walk through and help ourselves to anything that we might deem as value. I was delighted to get my hands on a couple of her old cookbooks, smelling of authenticity and pure memories. One was a book on all things chocolate and I got right to work putting that one to use. I picked this fun pie recipe and of course had to jazz it up to make it my own. Very decadent, yet playful-this dessert will be both sure to impress and entertain your loved ones.

you'll need:

3 squares of unsweetened chocolate
1 stick of butter (1/2 cup)
3 eggs beaten a bit
3/4 cup sugar
1/2 cup corn flour (of course regular white stuff is fine too)
1 tsp vanilla
2/3 cup sweetened condensed milk
2 2/3 cup shredded coconut (sweet of course)
1/4 cup chopped nuts (i used pecans)
2 tablespoons butterscotch chips (garnish optional)

Melt chocolate and butter in saucepan until smooth as silk. Stir in eggs, sugar, flour, and vanilla. Pour into greased up pie plate. (9') Combine milk and coconut and nuts and stir up. Spoon onto chocolate mixture and try to leave an inch border around edges of pie. Bake at 350 degrees for about 30 minutes. Cool it before you dive in. ENJOY!
