Brown Eyed Black Beans
If there ever was a food that I could eat and eat for days on end and NEVER tire, it would surely be black beans. Those versatile little buggers are packed with protein and unique flavor. I use them a lot in my mexican dishes and even stuff them in other dishes that don't usually call for them. But my favorite is just feeding on a pile of back beans alone...with a couple of added ingredients of course. Snack on these with pitas or tortillas, or just with a spoon. MMmm!!
You'll need:
1-2 cans of black beans (extra liquid included)
1/3 cup crumpled bleu cheese
3-4 strips crumpled cooked up bacon
1/2 onion chopped
1 tsp garlic
1 tsp chili powder
1 tsp coriander
1 tsp cumin
1 tsp lime juice (squeezed) or lemon is fine too)
1/2 cup salsa
1 bunch chopped up fresh cilantro
In a small sauce pan heat up the black beans. Stir in spices and drop in the bleu cheese until melted through. Saute onions until translucent and add to black bean mixture. After everything is thoroughly heated, remove from stove top and enjoy it!
