Baby Black Bean Tacos



If there's one thing everyone knows about me, it is my love for small things. Tiny little miniature treasures have me squealing for incredible amounts of time. So why not incorporate my desire for the minuscule with my love for cooking?! And so I created the tiniest taco you ever could love, but packed with humongous flavor. The tacos are quite simple to make and I just stuffed em' with my favorite things. They were a big hit at the friends house and were gone in minutes. Enjoy!!

For taco shells:
4 large flour tortillas
a small cup with thin rim
canola oil for crispifying

Just take the cup, rim side down and stencil a dent into the tortilla. I got 3 out of 1 large tortilla. Punch out a bunch of circles, maybe about 12 mini tacos altogether? I then heat up some oil in a shallow pan and got a trusty pair of tongs. Allow one side of the circle tortilla in the oil (it will be the shape of a half moon) and and crisp it up. Repeat with other side and you have yourself some adorable taco shells. Let drain on a paper towel. Continue to shape the rest of the shells and set aside.

For innards:
black beans
crumbled bleu cheese
pico de gallo

Warm black beans in a small sauce pan. Mix with crumbled bleu cheese until thoroughly melted into a creamy mixture..Spoon into empty tacos and top with a spoonful of pico. You're all set! Arrange on a cute serving tray and watch your friends ooh over your sweet appetizer!!
