The Best of Bruschetta
Nathan and I were in California visiting his folks and his dad whipped this up in a jiffy for the traditional picnic we embark upon at the vineyard... We loved it so much, Nathan insisted I try and put together my own recipe when we got home and I did just that! This bruschetta is light and flavorful, tastes delicious on french bread fresh out of the oven... It's a great start to a meal or served as a side..
you'll need:
3 Roma tomatoes sliced and diced
1-2 tbsp extra virgin olive oil
2 cloves of garlic
1 tbsp sugar
1-2 teaspoons balsamic vinegar-my hubby LOVES this part
1 splash of white wine vinegar
6-7 basil leaves-finely chopped or ripped into small pieces
salt and pepper to taste
1 long loaf of french bread
In a large bowl, throw in first 6 ingredients and stir gently to get the tomatoes coated..Add in fresh basil leaves and sift on some salt and peppa... A little more stirring and you've got a nice colorful bruschetta to top the happiest of breads.. You can either toast the bread or rip of pieces and scoop up the mixture...either way, it's a tasty treat! Enjoy!
