Tahini Chicken Salad
I've really got a thing for crunchy, sweet and salty, and this salad nails all 3.. I never used to be a salad fan because I just felt like a super sized rabbit.. But salad gets a bad rap, you can do so much with it, and the colors, texture, and taste are hard to go wrong.. This one is beautiful to look at, AND beautiful to eat!! Try it, you'll like it!
you'll need:
1 boneless chk breast, marinated in
Tahini dressing ( my pick: Annie's Naturals [Goddess])
2 cups of arugula or spinach leaves
3 tablespoons crumpled bleu cheese
1 handful craisens
sprinkle of slivered almonds
more goddess dressing
In a pan, cook up the chicken breast in the tahini bath until fully done, and has a nice charred shell.. Cut lengthwise into strips.. Toss on top of arugula, bleu cheese, craisens, and almonds, and top with more dressing of you so desire.. Enjoy the crunchity-crunch!
