White Bean Creamy Chicken Chili


A lot of times, once the colder weather hits, we love to have every one over and do Soup Salad and Bread night...Everyone brings over some fun kind of hearty soup or salad, and there's plenty of loaves of crusty french bread.. This soup is always a hit and we make it every time..It's always fun to experiment with, but the delicious flavor never departs! Enjoy!

you'll need:

3 large boneless chx breast, shredded
3 cans of white northern beans
2 cups chicken broth
1 small onion sliced/diced
4 garlic cloves
1 tsp coriander
1 tsp oregano
1 tsp cayenne
2 tsp cumin
1/2 cup half and half
1 can diced tomatoes/green chilies
1 large bunch cilantro finely chopped

Boil the chicken breast and shred it up. Toss it into the soup pot. Add chicken broth and cook on medium heat.. In small pan, saute onion and garlic until translucent in color and add to collection. Stir in northern beans and keep up the stirring. Add coriander, oregano, cayenne, and cumin and let simmer all together... Drop in the can of tomatoes and chilies as well..It's looking hearty, eh? Lastly pour in half and half and large bunch of cilantro.. Mix everything together and you should have some dang good soup! For garnish, top with dollop of sour cream, tortilla strips, an shredded cheddar cheese! MMMMmmm!!!
