Sweet Potato Curry Chips
Tasty little buggers, not to difficult to make, and satisfying to the palette.. I just cut a couple sweet potatoes extremely thin and went to work at them.. of course I had to inject em' with my bengali staple [curry, of course] and they have a very sweet and savory tang..Better to bake them than fry, but the time spent is worth it!! go ahead, try a few!
you'll need:
2 sweet medium size sweet potatoes (NOT yams) thinly slices into rounds
olive oil to coat (about 1-2 tablespoons)
1 tsp ginger
1 tsp curry
kosher salt and pepper
After cutting through the potatoes, toss them in a large bowl to coat them with the olive oil..Add ginger, curry, and salt and pepper and make sure the spices have made friends with their orange counterparts...
Spread on baking sheet covered in tin foil and try to make sure they are evenly spread out and not overlapping too much. Bake at 400 degrees for about 35-40 minutes.. Try to stir em' around once or twice so they all get a turn warming up..Enjoy!
I ate mine with plain ol' ketchup, but it might be fun creating your own fun dipping sauce like garlic aoili or a creamy ranch..
