Well, I feel like I'm back in the game!! I set to work in the kitchen and threw together what was left in the fridge and something tasty and absolutely delicious was born!! When you're down to the bare bones before shopping day, you HAVE to be creative, and I'm thankful I was able to make sure the dining table was not empty!! My husband and son thank me, and so will yours with this full flavored recipe!!
you'll need:
1 pkg croissant roll dough
1 tube of ground turkey
1 1/2 onion chopped
2 tsp minced garlic
1 tsp red pepper flakes
1/8 tsp ground mustard
1/8 tsp cumin
2 eggs
1 cup of plain yogurt
2/3 cup muenster cheese, grated
1 tsp lemon juice
1/8 tsp dill
In a 9x13 pan lay out croissant rolls out and pinch edges to seal..It should cover the entire bottom.
In large pan or wok, brown turkey and toss in garlic and onions. Stir in red pepper, mustard, and cumin. Set aside.
In separate bowl, beat eggs lightly. Add yogurt and muenster cheese..Thoroughly stir till it's all mixed..Lastly add lemon juice and dill.
Layer on top of dough, ground turkey mixture, and then egg mixture. Top with extra shredded cheese and sprinkle with real bacon bits.
