Chocolate Peanut butter Truffles
Look at these tasty treats! Combining chocolate and peanut butter, how can one go wrong? I promised that I would share a recipe for these truffles earlier and I delivered! These are rich and super sweet, and quite delicious..I love to savor one with a large glass of milk. They are perfect for a festive party or as a delicate dessert after dinner..Enjoy!
you'll need:
16 oz confectioners sugar (the powdered stuff)
1/2 cup butter
2 cups of creamy peanut butter
1 bag of semi sweet chocolate chips
Melt butter then slowly mix in confectioners sugar. Use mixer on low speed and thoroughly wrap in peanut butter..Make sure all is well blended. Drop by spoonful onto huge baking sheet covered in wax paper. Refrigerate for about an hour.
Melt chocolate chips on double broiler or microwave stirring constantly. Add a little corn oil to help smooth out.
Mold spoonful of peanut butter mixture into ball and coat in chocolate. Return back to sheet. Repeat with rest of balls.
Chill for another hour to let truffles harden.
