Inside Out Turkey and Cheddar Pockets


I can't help it that I use croissant roll packages so much. I LOVE them and they are so versatile..I use them for the bottom of casserole dishes, dough for my pizza crusts, and and as a rich buttery pastry shell for my fruity desserts...This time, I created little pizza pockets and stuffed them with turkey and cheese. My son Benjamin really enjoyed them and they were very easy for him to handle on his own. Try em', you'll love them!

you'll need:

2 croissant roll packages, triangles gently separated
1 small jar of pesto
deli sliced turkey
sun dried tomato cheddar cheese

Start with one triangle and spread some pesto on it, leaving a tiny border. Fold one or two pieces of turkey on it, and then a couple slices of cheese to fit in the triangle. Top with another triangle and pinch edges to seal. Brush with egg and place on a cookie sheet covered with tinfoil. Sprinkle a little oregano.
Repeat with rest of triangles until they're all used up.
Bake at 350 degrees for about 14-16 minutes.
