Gorgonzola de Fritos


I consider this to be one of my highest accomplishments. I have mentioned earlier how much i LOVE the fritos de azul at San Chez..Those small balled fritters filled with melted gooey bleu cheese. I could eat them every day for 3 meals a day. (of course I'd be well over obese)
Well, I can't keep throwing my husband's well earned money going out to eat all the time, so I was determined to try and whip these up at home.
Even better. My sister has the cookbook to San Chez and the fritters are in there!! So using that recipe as a compass, I switched out and added a different cheese so I could take part ownership of this "new" creation.
We threw a surprise party for my good friend Stephanie (who also shares a passion for these tasty treats) so it was a perfect time to try and put them together. I did! My dough turned out, and I fried those balls to a crisp golden brown color!!
I was delighted that everyone loved them and I will be sure to make them again.
Go ahead, try em and you'll see what I'm talking about!!

you'll need:

1/2 cup of corn flour (regular is fine too)
1/4 tsp thyme
1/4 tsp black pepper
2 tsp kosher salt
yolk of one egg
2 tsp brown sugar (white is fine too)
1 TBS+1/4 tsp EVOO
1/4 cup milk (i used vitamin D for extra richness)
1/4 cup cold water
5 oz Gorgonzola crumbles

Sift and mound flour in large mixing bowl, hollow out center. Put egg yolk, salt, EVOO, sugar in center.
Mix on low speed, or by hand and slowly add water and milk until no lumps remain. Add Gorgonzola and mix well. Tear off small pieces and roll into balls (about 1-2") on a baking sheet covered with wax paper. Refrigerate for at least half an hour until ready to fry. In a large wok, fill with canola oil about 2-3 " deep and wait till heat reaches 350 degrees. Drop golf ball sized balls and fry until golden brown.

You are one talented chica!! Those look delicious. :-) Food is not my strength (at least not cooking it).

Jana! Those are my fav too...Cal gave me the San Chez cookbook 5 years ago and we had a tapas birthday party for him a couple years ago and we each made tapas from the cookbook. Such fun recreating restaurant favorites isn't it?! Mine aren't as good as San Chez (Cal says!) but, I don't have a deep fryer so cut me some slack! Yours look AMAZING! Good job!
