Isla Mujares Curry Burritos



Nathan and i had the rare opportunity to travel back to our honeymoon spot, the small island of Isla Mujares just off the coast of Mexico..It's such a tiny little place, but a true dream of mine..We took another couple with us and probably one of my most favorite things was traipsing around the island for good eats..All the most authentic, unique flavors you can imagine and all in such a charming exotic place!!
One small sidewalk shop held an array of treasures..My absolute favorite was a little number that can only be described as a chicken curry burrito. I kindly asked the man who made all the eats from scratch if he'd be willing to share the recipe for this amazing dish..He laughed easily and in his thick accent he spouted off all these random ingredients and I tried to make a mental check list.
So, this is my attempt at a Chicken Curry burrito, island style. Nathan was very encouraging and said they tasted very similar to the ones we fared on the island.. We love all the sauteed veggies, the beans, and the curried chicken.
We love to eat them and imagine we are back on the Island of exotic beauty and savory smells...Enjoy!

you'll need:

2 boneless chicken breast
I can of black beans
1 small can of coconut milk
2 cups of cooked white rice w/ cilantro and lime
i onion sliced and diced
zucchini sliced in half moons
yellow pepper sliced
2 red ancho chilies (to taste, this is probably a MILD)
2 tablespoons curry powder
1 tablespoon cinnamon
1 tsp grated ginger
1 tsp coriander
1 tsp minced garlic
1 tsp red pepper flakes
small flour tortillas
mexican cheese blend

In a large bowl mix together coconut milk, curry, cinnamon, ginger, coriander, chilies, garlic, and red pepper flakes. Immerse chicken breasts and cover with wrap. Chill for an hour or two.

In a large wok, saute onions, zucchini, and yellow pepper. Season with sea salt, ground pepper, and a 2 teaspoons of curry. Set aside.

After chicken is done marinading, throw in wok and cook with veggies. It will all be a swell yellow color.
Once that is finished, you can begin to assemble your burrito.

tortilla shell, layer of rice, black beans, cooked chicken, veggies, and top with mexican cheese blend.
