Jimmy Football Dip
My husband is so unselfish. He knows I am not a huge fan of football (I mean c'mon, a bunch of guys in tight pants chasing after a pigskin?) So instead on Sunday afternoons plopping down to watch the game, he chooses to spend time with Ben and I and we really appreciate it. For once though, we'd like to return the unselfish actions. February brings us the Superbowl, and that is something we can both have fun participating in. We get together with friends, share great grub, and yell at the TV screen. I don't really understand what's going on, but I do understand the pleasure and delight on my husband's face when he's truly relaxing while watching the big game. I put together a crazy fun dip and we headed over to the Gentry's house in Ada and had a wonderful time. I guess we could get used to this...
you'll need:
2 packages of Jimmy Dean sausage
1 onion chopped
2 teaspoons minced garlic
1 long rectangle of Velveeta cheese-cubed
2 cups of your favorite salsa (I used jack's)
1 tsp cumin
1/8 tsp cayenne
2 tsp red pepper flakes
1 can of refried beans
In a large pan, saute onion and garlic in a little oil. Brown sausage in same pan. Add red pepper flakes, cumin, and cayenne.
Once meat is browned, throw in cheese cubes a little at a time until melted. Repeat with rest of cheese. In another small sauce pan, warm refried beans with a little water until it becomes smooth in consistency. Pour meat mixture into large crock pot. Pour in bean mixture. Add salsa and stir until all ingredients are close friends.
Serve with tostito scoops.
