A Gift From the Mediteranean




Easy to throw together and to be enjoyed by everyone, GF eaters included! I modified it a tiny bit, but the explosion is still there!

You will need:
1-2 cups small cherry tomatoes, cut in halves,
1 large Kirby cucumber, sliced and chopped, ( you may deseed if you like)
1 red onion, cut into chunks
1 red pepper, sliced and diced,
1 green pepper, sliced and diced
1 cup kalamata olives, cut in half
1 small container of feta cheese, crumpled
a simple garlic dressing drizzled on top

Throw all cut up veggies in large glass bowl. Add feta cheese and mix. Finish with dressing. Make sure it's mixed in well.
Easy as pie.
Oh, and it's a good way to get your hubby to eat his vegetables. at least I got mine to eat his..;)
