Curried Chicken Salad Wrap





This is an amazing tasting salad as it is very versatile and can be packed into a wrap or piled on a croissant roll.. It's refreshing, with a little zip from the curry, and a mighty crunch from the onion. My good friend Casey made it for me first, and I compared it to the wrap they serve at Rose's in East Grand Rapids. When making it in my own kitchen, I used a little less grapes (Casey loves a lot of em') and added my own twist and it turned out well. Give it a try and let me know what you think!!

You'll need:
3-4 boneless chicken breast, cooked and roughly chopped
1 cup mayonaise
1 tablespoon curry powder
1 tsp lemon juice
1/2 purple onion, finely chopped
1/4 cup purple grapes, cut in half
Salt and freshly ground pepper to taste (I am generous with the pepper)
Romaine lettuce leaves
Tortillas for wrapping


In a large bowl, mix cut up first 4 ingredients. Mix in onion and grape till all is well blended. Finish with black pepper. Place a romaine lettuce leaf down first on tortilla. Spoon mixture down middle of tortilla. Wrap tightly and cover in Saran wrap. Repeat with rest of chicken mixture. Chill for about 1/2 hour, and slice on the diagonal. Serve it up!

To make this lower in fat or GF, sub mayo for fat free, and use GF tortilla wraps instead of flour
