Packed with protein and flavor, I combined 3 different nuts high in omegas and good fats, a great bar for on the go and very helpful in satisfying your sweet/savory tooth.
I see all these bars and balls and digestive biscuits on Pinterest, I thought I might as well add to the pot with my own rendition. Please help yourself and give em' a try!
Method:
In food processor combine (dry ingredients)
1 cup cashews
1 cup almonds
1 cup pistachios
3/4 cup shredded coconut
3/4 cup peanut butter
3/4 cup flaxseed meal
Drizzle in wet mixture
3/4 cup coconut oil
3 tablespoons honey
1 1/2 tbsp vanilla
Pulse until well blended. Pour over 9x13 pan that has been covered with wax paper. Spread evenly.
Pop in fridge for an hour.
Melt semi sweet chocolate chips in double broiler. Pour over top of bars and spread evenly. Fridge again for another hour.
Sprinkle with sea salt and cut into individuals. Wrap in wax paper.
