Stephanie is one of my closest friends, we have been friends since college, and our husbands were friends since they were little boys. They grew up in Washington, and later met up at Grace Bible College. Since then, we have been inseparable, we do lots of dinners and hanging out time together, and Steph and i were even pregnant together, her with her first, me with my second. So now, she has finally welcomed her baby daughter Zoe into the world, and she is just perfect!
Karina is another dear friend of mine, I met her at a wedding, but for some special reason, we connected so tightly, and I consider her a true friend. She is brown like me, her husband has the same name as my husband, and she has 2 peanut butters just like me, except now, she is one ahead of me, with this little baby Rowan arriving. He is also perfect.
Babies are such a gift.
I remember what a blessing it was to be gifted with meals and help immediately after a baby being born. We were floored by all the meals, the visitors, the support, the offers to watch the older ones, it means so much, and I believe it is such a gift to receive any of it. So I do my best to reciprocate the help, and offer my service in any way I can.
I am probably more strong at making a meal, so I chose to do that, and I am humbled that I can be used in that way. I brought Karina Asian Sesame Salad and tried out this new tasty recipe; she texted me later that evening letting me know she loved them:) I also passed a few sweet testers out before to husband and son and they also gave them the thumbs up.
These treats combine two of my favorites, peanut butter and chocolate. Oh, and savory and sweet. I am not a huge pretzel fan, but you really need the crunch and zip of saltiness to counter the peanut butter filling. The last step in dipping the treat in chocolate just tops it. It's an explosion of flavor in your mouth. Let me know if you give them a try! I know they aren't the healthiest, but for a mom who is breast feeding, they sure pack a lot of protein;) I popped them in the freezer as the summer tends to melt them-pull one out whenever the fancy strikes you.
you'll need:
1 cup creamy peanut butter
1/2 cup oats
3/4 cup brown sugar
2 tablespoons softened butter
1 tsp Spanish vanilla extract [regular is fine]
snaps [square shaped pretzels] I used Snyders of Hanover
semi sweet chocolate chips for dipping
in a large bowl, combine first 5 ingredients. mix well.
on a baking sheet covered in tinfoil. lay pretzels first.
spoon or roll small ball shaped plops of peanut butter mixture on top of first pretzel.
sandwich another pretzel on top. gently press in.
pop in fridge for 15-20 minutes.
melt chocolate chips in microwave.
dip snaps in melted chocolate and return back to baking sheet.
repeat till all snaps are dipped.
freeze or refrigerate in an airtight container.
