Oreo ChocolateTruffles

i've made these too many times to count because they are delicious, very efficient and easy to make, and they turn out beautifully. they are hard to mess up. they require very little prep and time, so they are a wonderful go to when you're in a need of a fun treat to share. since being here in Oxford, i have already made these twice, once for a baby shower, and the second time for our house church. they seemed to go over quite well both times. my friend Ruth was ever so encouraging, she thought i should open up a shop here in Oxford and start selling these treats. a very kind and generous thing for her to say. And at the house church our friend Max said these truffles were one of the top 25 most delicious foods he has ever put in his mouth. all quite encouraging raves, sure to fill my heart with joy to make so many taste buds happy. :) i hope they make your taste buds dance too!

here is the recipe:

1-2 sleeves of Oreo cookies
1 250g full fat soft cheese [that is another name for cream cheese here in England, same consistency, same great taste, but if you prefer, I usually use
Philadelphia cream cheese also]
1 100g pack of plain chocolate chips [again, if you are in the states, i use semi sweet chocolate chips, this is just their version of these]
1 100g pack of white chocolate chips
a drizzle of olive oil

1. in a large ziplock bag, place oreos in and crush them to a good consistency [some little chunks, plenty of crumbs]

2. fold into soft cheese that you have allowed to come to room temp in a large bowl. mix oreos in until well incorporated.

3. line a large plate with foil, and begin forming small balls with oreo mixture and place on foiled plate.

4. pop into freezer once you have used up all the mixture to make balls.

5. in a microwave bowl, pour in plain chocolate chips and drizzle a bit of olive oil in as well. [this will give you added shine to your truffle shell.]

6. microwave on high in 30 second increments, stirring in between.

7. once chocolate is melted, pull out truffles.

8. dip one ball at a time with a fork, making sure to coat each ball evenly. place back on plate.

9. repeat with remainder of balls. pop back in freezer.

10. melt white chocolate the same way you did with the plain chocolate.

11. pull truffles out, but this time, taking a fork or a spoon, drizzle white chocolate in a quick slashing motion putting the final finishing touches on your oreo chocolate truffles.

12. keep chilled until ready to serve.
