Hearty Sweet Potato and Peanut Butter


this is just a quick jot down because i just happened to share this on my Instagram stories and many were so kind and tried it out for themselves and seemed to love it as well! it is quick to throw together for a hearty lunch, creamy, savory, and sweet, with a pop of coriander and lime for a bright refreshing topper. i love colliding sweet with salty, this is the perfect dish! i made it today and my friend karina stopped by just as i finished. she exclaimed, "your house smells amazing!" oh, that is so nice! I offered some to her timidly and she accepted. we started talking a mile a minute [as we do when we need to catch up] and she stopped in the middle to say, "this is SO GOOD! i love it!"wow, that makes my heart so happy. i thought i better share it here as well, so i don't forget! 

ingredients:
1 large sweet potato, peeled and cut into chunks 
1-2 cups of chopped kale or spinach
2-3 whole garlic cloves, peeled and finely chopped
1 tsp chili powder
1 tsp cumin
1/2 tsp coriander
1 tsp madras curry powder 
1 tsp crushed red pepper-more if you want a little more kick
2 tbsp melted creamy peanut butter
1/4 cup slivered almonds
freshly chopped coriander
freshly squeezed lime 

ok, so i've tried this two ways, both work well. first time around i pan fried the potatoes, adding spices and cooking it all up that way. i also used kale the first time and threw that all in so it would cook down and lose some of that intense fibrous texture. 

second time around i seasoned the sweet potatoes in olive oil and seasonings, slivered almonds and garlic cloves.. and popped it in the oven at 350 for about 15 minutes. it is a bit slower, but it does cook the sweet potatoes really well leaving a crisper edge and fluffy insides. i added spinach this time around and that cooks fairly fast if you throw it in at the end. 

proceed how ever you wish. 

melt peanut butter over low heat and drizzle that all over your cooked seasoned sweet potatoes. top with fresh coriander and squeeze of lime. 

so so good and this actually one of my favorite little dishes to make.
