i feel like i can hardly can call this a recipe, because it is incredibly easy and makes a generous amount, but i want to share it with you, more like a hack, if you are looking for a fast mid week meal with little prep, one pan to clean, and a versatile tasty dish to eat and save the rest for left overs for the rest of the week. i have been picking up those pre packaged shredded chicken that is already cooked for your convenience [this whole meal is a convenience, if i'm honest], from Costco and it has been a life saver plenty of times because it has saved me plenty of extra steps when making burritos, tacos, soups, and in plenty of other dishes that call for cooked chicken. it is a staple in my cart, for sure.
anyways, i literally just take a cast iron skillet, heat it up with a bit of oil, and throw the chicken in there. i toss in 1 packet of taco seasoning, i do often make my own, but we're going for quick and convienent, so let's not frown upon the packet just yet.. i also sometimes add salsa if i have it on hand, but it's delicious either way, because the chicken is plenty juicy and i just add a little water when I'm heating it all up, if i feel like it needs a little extra oomph.
Basically, that's it! Cook it all up, coating the chicken, shredding down any big chunks that you want, because the chicken does come in a variety of sizes from very shredded, to larger boneless breasted pieces. i like that i can do what i want with it.
i serve this skillet chicken with corn tortillas, shredded cheese, pico de gallo, and lots of sour cream.
this would feed a lot if you had people over, or for sure your family and then some.

you'll need:
1 package of cooked boneless chicken breast, about 1 pound, [got mine from costco]
1 packet of taco seasoning
optional 1 cup salsa
fresh lime & cilantro
splash of water
heat in a skillet until hot and seasoned and ready to eat, which is not very long from start to finish!
