Spicy Chicken and Sweet corn Laksa inspired Soup

  
So, this is a beautifully spicy soup, that is so easy to throw together in such a short amount of time, and it is full of an abundance of flavor! I love it because it reminds me of the Laksa soup i tried at the Banana Tree in Oxford several years ago. It is brothy, soupy, the perfect amount of creamy, and swimming with veggies and shredded chicken. You can't go wrong! I found this recipe originally on Tic Toc, a lady was sharing how she had found it in a magazine, so its been passed through a few cooks hands, but it is now here, for you to try, and i used what i had to create something new! 

you'll need:

1 large boneless cooked chicken breast, shredded 
1 small can of red curry paste, i use Pengang 
1 can of coconut milk 
1 160z chicken broth 
1 12oz can of evaporated milk
1-2 cups of frozen sweet corn 
1/2 cup snap peas 
1/2 teaspoon of fish sauce 
1 cup matchstick carrots 
chopped cilantro 


In a large dutch pot with heavy bottom, heat a little coconut oil or oil of your choice. Add red curry paste and toast a bit to pull out the aroma and flavor. Add evaporated milk, coconut milk, and stock. Stir and mix everything up. You will have a beautiful base. 

Add in veggies, chicken, and fish sauce.  Stir. 

Let simmer on medium to low heat. Add in lime juice and fresh cilantro. 

Serve hot.
