Cheddar Beer Soup



I remember when my older sister had moved out and was working at the Big Buck Brewery over on 28th. In the windows were huge silver vats that shimered in the window. The brewery/resturaunt made their own beer and they incorperated it into their menu in creative ways. One being this incredible cheese beer soup. I LOVED it. I remember sitting at the bar, legs dangling off the bar stool, dipping my spoon into this delicious cheddary goodness. But sadly, that was many years ago and the restuarunt is no longer there.

That remembered taste that i remember with fondness is what inspired this recipe. It is a little thinner than what I remember Big Buck's being, but it still holds a lot of flavor and is warm, silky and inviting. The taste of beer is powerful but not potent. All the men I shared it with rather enjoyed it..:)

So without further ado, give this a try and share it just as autumn awaits in the wings!
Serve with a huge chunk of flufy french bread to mop up the bowl.

you'll need:

1 tbsp butter
1/2 cup chopped onion
1 tsp minced garlic
1 tsp worchestire sauce
1 bottle + 1/2 bottle of beer (my go to is Blue Moon)
1 (14.5oz) chicken broth
2 tablespoons corn starch
2 cups heavy whipping cream
2 cups sharp cheddar cheese, shredded

Melt butter. Saute onion and garlic. add worchestire sauce.

add beer and raise heat (about 3-5 minutes)

add chicken broth and bring to boil. then down the heat to simmer.

in a small bowl combine cornstarch and 3 tbs water and mix until smooth. set aside.

Add cream and shredded cheese to soup pan and and stir constantly while adding corn starch mixture. Thicken it up!

Garnish with bacon bits and more cheddar if you wish.
